Outcask Rum by Karu Distillery
Karu Distillery has launched their first rum expression, Outcask Rum at a trade launch held at Dulcie’s Kings Cross on 18 October. Outcask Rum (46% ABV) is molasses based, 100% copper pot still distilled in a 600L still made in Tasmania and undergoes a fermentation period of 2 weeks. Non-chill filtered, it is aged in ex-whiskey barrels from WA.
Golden amber in colour with a marked viscosity in the glass, it opens with sweet aromas of brown sugar, toffee, caramel, creme brulee, a hint of banana and vanilla. You could nose it for a long time as the aromas open in the glass. On first sip you’d expect that sweetness to translate to the palate. Instead you get a balance of the sweeter notes with raisins, honey, vanilla and subtle oak. The finish is long and dry. View the highlights here.
