With dragon fruit in season throughout summer and early autumn, here’s how to make Dragon Fruit Daiquiri.
Part of the cactus family, dragon fruit has a vivid pink skin with green spines. The flesh is either white or hot pink like these prickly pears freckled with small black seeds like kiwi fruit. Dragon fruit doesn’t have much of a flavour. It’s mildly sweet, a cross between a melon with a hint of strawberry and a texture that lends itself to smoothies and blended cocktails.
Cut the dragon fruit in half lengthways and run a knife around the edges of the skin then scoop the flesh and puree it in a blender. To make the cocktail, add the white rum, simple syrup, freshly squeezed lime juice and dragon fruit puree in a cocktail shaker with ice and shake until cold. Strain and serve.
White rum is essential to the drink otherwise the cocktail ends up an unappealing muddy brown in colour. The Dragon Fruit Daiquiri doesn’t need a garnish but if you must, add a thin wedge of the fruit to the rim of the glass.
Dragon Fruit Daiquiri Recipe
Ingredients
- 60 ml white rum
- 20 ml fresh lime juice
- 15 ml simple syrup
- 1/4 dragon fruit flesh, puréed
Glassware: coupette
Method
Add all the ingredients in a cocktail shaker with ice and shake until the tin is very cold. Strain into a chilled coupette and serve.
