Della Hyde, the fifth venue to open in four years by Applejack Hospitality is bringing a touch of old luxe lobby bars to the Sydney bar scene.
Named after American actress Della Pringle, the subterranean bar is located along Darlinghurst’s Oxford Street. Dressed in pink and green pastels with mood lighting, Della Hyde channels the faded grandeur of a hotel lobby bar with bare brick columns, ornate arched beams and clever touches such as key tassles on a wall serving as tab cards.
When it comes to drinks, there is a choice of two menus created by Della Hyde’s General Manager Joe Worthington and Applejack Group Bars Manager Lachy Sturrock. The Seasonal Drinks menu offers five cocktails on a fortnightly rotation, mainly fruit-driven and based on seasonality and availability of fresh produce. The Main Menu lists four cocktails ($18), two of which are coffee-based along with a selection of wines, beer, cider and spirits. The Sparkling Strawberry Daiquiri is a carbonated drink, a light and sessionable mix of rum, strawberry consomme and citrus. Della Pringle’s Tingle is a fruity alternative with gin, rose vermouth, mango, basil and lemon with bitters and soda.
The food by executive chef James Privett brings European & North African inspired share dishes such as pork short ribs with muhammara, flat bread with dips and Della Pizza with lamb and labnah.
While Della Hyde might seem to fuse three themes into the one venue, it has a unique personality and adds another dimension to the Sydney bar scene.
Della Hyde is open Tuesday to Sunday and a DJ keeps the party going until the early hours.
