Brix Distillers, a craft rum distillery and bar has opened in Sydney’s inner city suburb of Surry Hills.
Located along Bourke Street in Surry Hills, Brix Distillers is a dedicated rum distillery and bar by friends and co-founders, Damien Barrow, James Christopher and Siddharth Soin whose mission is to shift attitudes towards rum.
A fully operational 24/7 rum distillery and ageing facility, Brix Distillers features an Australian-made 1200-litre copper still with Head Distiller Shane Casey (ex Archie Rose) overseeing the production. The rum distillery has launched with a core range of Brix White, Brix Gold and Brix Spiced which are currently available at the Brix Bar with further rum styles and availability forthcoming.
Adjoining the distillery is the Brix Bar, a 70-seater industrial-style open bar and kitchen area with . The design integrates the open production of the distillery into the aesthetic with raw concrete, muted greys and pops of colour from the copper still and a back bar lined with over 150 rums from around Australia and the world.
Bar Manager Doug Laming (ex The Smoking Panda, Mr G’s, and Rabbit Hole Bar) has created an extensive cocktail list featuring rum classics along with signature cocktails with playful names.
Brix & Mortar combines Brix Gold with Bulleit Rye, cane syrup and orange bitters, Raising the Dead is a take on the Corpse Reviver #2 with Brix White, Cointreau, Lillet blanc, lemon, sugar cane syrup and an absinthe rinse, and Pash the Distiller features Brix Gold, pineapple and strawberry tepache, rhubarb bitters, lime and mint. A sugar cane press is put to use to supply fresh ingredients. Alternatively, guests could simply tell the bartenders their favourite classic rum cocktail such as Rum Old Fashioned, Daiquiri, Mojito, Cuba Libré and they will make it using the right Brix rum.
Every night on the hour, a ‘rum trolley’ roams the bar offering guests an intimate experience with a rum guru, sampling and learning about a selection of rums. Seven rum flights are also available at the bar ranging from the Brix Tasting Flight to Cask Finish Flight.
