How is Bacanora Made
Similar to Mezcal, the agave are cooked in an underground pit ovens heated with mesquite charcoal then crushed in the pit using a tahona.
Bacanora Flavour Profile
Closer to Mezcal than Tequila, Bacanora is drier with less smoke, peppery notes and vegetal/herbaceous notes with an earthy finish.
