What is Sotol
Sotol is a distilled spirit made from the Desert Spoon, a plant is similar to the agave/maguey plant but it is not agave.
Agave Type
Sotol is made from the Desert Spoon plant, dasylirion wheeleri / asparagaceae / sotol which has a very small yield but is not agave.
Region/Location
Sotol is produced in Chihuahua, Durango and Coahuila.
How is Sotol Made
Sotol is produced in the same way as Tequila where the piñas are cooked in above ground ovens so it does not have the smokiness of Mezcal.
Sotol Flavour Profile
Sotol has a pronounced earthy flavour profile but not as smoky as Mezcal.
Sotol Categories
The categories are in line with the designations for aging tequila, mainly:
- Plata: un-aged
- Reposado: aged several months to a year
- Añejo: aged for a minimum of one year
How to Drink Sotol
Sotol mixes well with pineapple and goes well with citrus style cocktails such as variations of The Last Word.
