The Aero Mexico tequila cocktail is a riff on the Airmail cocktail with light and fresh agave notes and a hint of sesame.
Named after the Airmail cocktail on which it is based, the Aero Mexico tequila cocktail by Reece Griffiths, Venue Manager at Chula Sydney substitutes tequila for rum, keeping it light with fresh agave notes. The use of sesame infused leatherwood honey syrup adds another layer to the drink that complements the venue’s Mexican food.
The sesame leatherwood honey syrup is prepared using the sous-vide method but for the home bartender, it can be made on a stove top.
The cocktail can be pre-batched for same day use by combining the first three ingredients in a glass bottle and keeping the premix refrigerated. When ready to serve, shake the pre-batch with ice, strain into a wine glass and top with champagne or dry sparkling wine.
Aero Mexico Tequila Cocktail Recipe
Recipe by Reece Griffiths, Chula Sydney
Ingredients
- 45 ml silver tequila
- 15 ml lime juice
- 15 ml sesame leatherwood honey syrup *
- champagne or dry sparkling wine to top
For Sesame Leatherwood Honey Syrup: *
- 125 ml leatherwood honey
- 125 ml water
- 1/2 teaspoon toasted sesame seeds
- 1/2 teaspoon sesame oil
Glassware: wine glass
Garnish: edible flower
Method
In a cocktail shaker, add tequila, lime juice, honey syrup and shake with ice. Strain into a wine glass and top with champagne or dry sparkling wine. Garnish with an edible flower.
* To make the sesame leatherwood honey syrup, combine all ingredients and cook sous vide for one hour at 63oC. Strain, bottle and store in the fridge for up to one week.
